Dragon Fruit Salad with Corn

Today Emily will show you how to make this tasty and healthy salad.  It’s very simple and quick to prepare. We are using 2 varieties of Dragon Fruit – regular white and some pink/purple.  The pink is usually a little sweeter but you can definitely make this salad with only white.

The dressing is a variation of your typical Thai salad sauce.  It balances sweet, sour and salty by way of the palm sugar, lime and fish sauce. Chili is optional (but certainly not necessary) to add a spicy element if you like.

Vegans can substitute the fish sauce to soy.  And cashews work very well if managing a peanut allergy.

INGREDIENTS

half       Corn cob (boiled until cooked)

1            Dragon fruit

2 tbsp   Roasted peanuts

4            Small cloves of garlic

1            Chili (optional)

1 tbsp   Palm sugar

1.5         Limes

1 tbsp    Fish sauce

2 tbsp   Coriander/Cilantro
